Corn Chowder
Ingredients
- 1 medium onion, chopped
- 2 Tbsp butter
- 2 14oz cans chicken or vegetable broth
- 2 14.75oz cans creamed corn
- 6 medium potatoes, cubed
- Salt
- Pepper
- 2 cups shredded chicken (optional)
- 1/2 cup plain Greek yogurt (optional)
Directions
Melt butter in a large sauce pan. Add onion and sauté until tender. Add broth, corn, potatoes, chicken, and season as desired. Bring to a boil. Cover and reduce heat and simmer for 20 minutes or until potatoes are tender. Reduce heat to low and stir in Greek yogurt. Simmer on low until heated through.
